Ingredients

 

      • 1 lb. Amber Oaks Ranch Pasture Raised Ground Pork or Chicken
      • 1 tbsp sesame oil (olive or avocado works too)
      • Kosher salt & freshly ground black pepper
      • 1/2 small yellow onion, finely diced
      • 5 garlic cloves, minced or grated
      • 1 tbsp fresh ginger, grated
      • 1/4 cup hoisin sauce
      • 2 tbsp soy sauce (Tamari recommended)
      • 1 tbsp rice vinegar
      • 1 tbsp sriracha (optional)
      • 2 scallions, thinly sliced
      • 1–2 heads butter lettuce (iceberg works too)

 

Instructions

  1. Cook meat: Heat sesame oil in a skillet over medium. Add ground pork or chicken, season with salt and pepper, and sear a few minutes before breaking up.
  2. Add aromatics: Stir in onion and cook until soft, then garlic and ginger until fragrant (~30 sec).
  3. Add sauce: Mix in hoisin, soy sauce, rice vinegar, sriracha, and half the scallions. Cook 2–3 min until sauce coats the meat. Keep warm.
  4. Assemble wraps: Separate lettuce leaves (2 per wrap), spoon meat mixture on top, and garnish with remaining scallions and extra sriracha if desired. Fold like tacos and enjoy!
