From Homesteaders to Ranchers

Amber Oaks Ranch is a 70-acre homestead just south of Thorndale, Texas — about 35 miles east-northeast of Austin. It was established in December 2015 by John & Molly Pantalone after more than a decade of dedicated homesteading outside of Houston.

The cornerstone of the ranch is a pastured, meat-based operation. We raise beef, pork, and poultry on pasture — the way it should be. Every animal is rotationally grazed on chemical-free ground, moved to fresh pasture so they can live naturally and thrive.

John & Molly Pantalone

Howdy! We're John and Molly — high school sweethearts from Georgetown, Texas who turned a shared passion for homesteading into a family ranch built on regenerative principles.

  • 🎓 Both Texas A&M University graduates, Class of '91 — John studied Civil Engineering; Molly studied Architecture and Anthropology, and later earned her teaching certificate.
  • 🎖️ John was commissioned as an Army Officer in 1992 and served six years on active duty. He currently works in technical sales for the power generation industry.
  • 👨‍👩‍👧‍👦 Three grown children out on their own and four grandchildren who love visiting the ranch.
  • 🏡 Over a decade of homesteading experience before establishing Amber Oaks Ranch in December 2015.

From Dream to Reality

Early 2000s

The Homesteading Years

John and Molly began homesteading outside of Houston, learning regenerative agricultural practices hands-on and building the skills that would shape their future ranch.

December 2015

Amber Oaks Ranch Founded

With over a decade of homesteading experience, John and Molly purchased 70 acres in Thrall, Texas and established Amber Oaks Ranch — a pastured meat operation built on regenerative principles.

2016 – 2018

Building the Herd

The first cattle, pigs, and chickens arrived on the ranch. The rotational grazing system was developed and refined — moving animals to fresh pasture daily to build soil health and produce the highest-quality meat.

2019 – Present

Growing the Community

Amber Oaks expanded to multiple Central Texas farmers markets, launched the Buyers Club subscription, and built a loyal community of families who know exactly where their food comes from.
