What We Raise

Every cut we sell starts on this pasture — cattle, pigs, lambs, chickens, and laying hens, raised regeneratively on chemical-free ground. Browse it all in one place, order exactly what you want, and pick it up at your farmers market.

Beef

Grass-Fed, Grass-Finished, Dry-Aged

Our cattle spend their whole lives on grass, moving across the ranch in a steady rotation and growing at their own pace. That's what grass-finished means here — the pasture does the work, start to finish.

Then we take the step most skip: every beef dry-ages a full two weeks before cutting. It's slower, and you can taste why — deeper flavor and a more tender texture in everything from ground beef to the bone-in ribeye.

Two weeks on the rail is the step most people skip. It's also the one you can taste.

Pork

Red Wattle Pork, the Old Way

We raise Red Wattles, a heritage breed prized for one thing above all: flavor. Our pigs live out on pasture, rooting and ranging the way pigs are meant to.

That life shows up on the plate. This is rich, well-marbled, old-fashioned pork — the kind your grandparents would recognize — with chops that stay juicy and sausage with real depth.

Nobody ever bred the flavor out of a Red Wattle.

Lamb

Grazed on Grasses, Herbs, and Wildflowers

Our lambs rotate across chemical-free Texas pasture just like everything else on the ranch, grazing freely on a naturally diverse mix of grasses, herbs, and wildflowers — never any hormones or antibiotics.

That biodiverse diet is what you taste: a delicate, clean flavor that's honest and satisfying, whether it's chops seared hot with garlic and rosemary or a leg of lamb roasted low and slow for the whole table.

The pasture seasons the lamb long before the kitchen does.

Chicken

Pasture-Raised, Organic-Fed

Our chickens live on grass, moved regularly to fresh pasture with sunshine, bugs, and room to act like chickens. Alongside everything the pasture offers, they're fed certified organic feed — nothing else.

The difference is a bird that tastes the way chicken is supposed to, whether you're roasting one whole for Sunday supper or keeping the week stocked with breasts and thighs.

Fresh grass shows up in the bird.

Eggs

Eggs from Hens on the Move

Our laying flock follows the egg mobile across the pasture, scratching through fresh grass under the oaks and leaving every paddock better than they found it.

The payoff is in the carton — thick whites and rich, golden yolks that tell you exactly where these hens have been.

The girls do the mowing, the fertilizing, and the laying.
