At Amber Oaks Ranch, our hens roam freely across our Thrall, Texas pastures — scratching in the dirt, chasing bugs, soaking up sunshine, and eating the diverse grasses and plants that make their eggs so incredibly flavorful and nutrient-dense. No cages. No warehouses. No tricks. Just chickens being chickens.
Healthy Hens, Healthy Eggs
Here at Amber Oaks, our hens have complete freedom to do as they please. We provide them food, water, and shelter, but there is no restriction on where or when they come and go. This is truly pasture-raised — where the chickens have the freedom to be chickens.
In addition to fresh water, sunshine, grass, and bugs, we supplement our hens’ diet with what they need to produce strong, nutrient-dense eggs. You can tell just by looking at them — our deep orange yolks are packed with flavor and nutrition.
And speaking of that deep orange color — it comes from how our hens live, not from shortcuts. Some producers have started adding marigold to their feed to artificially darken yolks and give the appearance of nutrition. We don’t do that. Our yolk color comes from our hens’ varied, natural diet on open pasture.
What Makes Our Eggs Different
Have you tasted our eggs? Their flavor is so rich, you can almost see it. The yolk of a pasture-raised egg is darker and thicker — ideally a deep orange, not washed-out yellow. Both the yolk and the white of a fresh egg stand tall, and when you cut into the yolk, it runs out like honey.
Our eggs come in all sizes, shapes, and colors. We often get huge double-yolk eggs, and sometimes we get tiny “pixie” eggs. If variety is the spice of life, why not savor the uniqueness of each chicken?
Every evening, we collect, clean, inspect, package, and refrigerate the eggs. When we need to wash an egg, we use warm water and a cloth to gently remove any dirt — preserving as much of the natural bloom (protective coating) as possible while keeping them clean and safe.

Our Flock Just Got Bigger!
We’re excited to share that 200 new hens have just arrived at Amber Oaks Ranch! These young ladies are settling into their new home on our open pastures, and in a few months they’ll be laying alongside our existing flock.
Growing our flock has been a journey. After the H5N1 bird flu crisis devastated industrial poultry operations — nearly 200 million birds lost across the country — getting replacement hens became a real challenge, even for small producers like us. When 500 pullets became available last year, John jumped at the opportunity and built a brand-new mobile coop to house them. Now with another 200 on the way up, we’re investing in the future so we can keep bringing you the best pasture-raised eggs in Central Texas.
More hens means more eggs at market — so if you’ve ever shown up and we were sold out, that’s about to change. We sell upwards of 200 dozen eggs each week, and this expansion will help us keep up with the demand from our growing community of egg lovers.
